Baking For A Wedding? Try Some Mini Champagne Cakes!

Rather than stick to the same old tried-and-trusted cake recipes, why not get adventurous with some delicious champagne-infused cup-cakes?

For this flavoursome dish (which comprises of the following: 2 ¾ cups of flour, 2 nobs of butter, one cup of your chosen champagne, 2 cups of sugar, 3 eggs, 1 tsp Vanilla and 3 ripe and succulent pears, and a pinch or so of salt) you’ll first want to pre-heat your oven to 175 degrees, or the equivalent gas-mark.

Take two bowls, one larger and one smaller, then sift the flour, salt and baking soda into the latter. In the former, it’s time to knead the butter and sugar together and then add your eggs and flour-based mixture. Finally, combine the vanilla, not forgetting your champagne. Everyone will find that their recipe is slightly different; experiment to make sure that the cakes pack a punch, but aren’t too soggy and overpowered by alcohol.

Add the pears and fit your cupcake tin with liners to suit. Shop around for some which are wedding themed if you like.

Once the cakes go in, they’ll need between 15 and 18 minutes, depending on the efficiency of your oven.
