The Thevenet-Delouvin Cuvee Insolite is both the aromatic exploration of Xavier Thevenet and 100% Chardonnay. Only 400 bottles of this very low-dose (3.8g / 1) Champagne have been produced, in a process which underwent malolactic fermentation and saw the very best attributes refined from the 2003 harvest.
Thevenet has, as usual, been very open about where this blend began life. In this case, the right bank of the Marne Valley played an instrumental part and oak barrels were used to keep the taste traditionally pure and woody.
According to Xavier, “...the wine was neither filtered nor spent in the cold.” There's a certain smokiness in this wine that sets it apart from all the rest. Add this to its exceptional purity and length – not to mention desirable elegance – and you have a champagne that will vanish off the shelves quickly, so you know what to do!
